Sichuan Salad Dressing

Basic Szechuan red oil vegetable salad is very popular in Sichuan and Chongqing with a spicy and numbing taste.

We call it 凉菜拼盘, offered at street food stores, supermarket and restaurants. Usually the dish mixes several types of vegetables but there is a large group of member to choose from. Cucumber, lotus root, radish, fresh kelp, bean skins, shredded potato and boiled peanuts. Though it is very humble and not famous at all, I think I should introduce it on the little corner because it is so yummy and easy to prepare if you happen to have one bottle of Szechuan chili oil at home. My favorite ingredients for a spicy cold salad is shredded jelly fish.

Recommended Ingredients

lotus root (莲藕), cucumber (黄瓜), shredded potato (土豆丝), Chinese long beans (豇豆),  shredded kelp(海带丝),  tofu skins (豆腐皮),   dried beancurd sticks (腐竹), bean sprouts (豆芽),  bamboo shoots (笋)

This is no restriction about the ingredients, you can choose yours based on personal preference and season.

Sauce Ingredients for 500g raw ingredients

  • 2 tbsp. Szechuan style chili oil
  • 2 tbsp. black vinegar
  • 1 tbsp. sesame oil
  • 1/2 tsp. sugar
  • 1/4 tsp salt
  • 1/4 tsp. Sichuan peppercorn powder or oil (optional)
  • 2 tbsp. light soy sauce
  • 2 garlic cloves, minced
  • 1 tbsp. vegetable oil
  • 1 tbsp. minced green onion
  • 1 tbsp. minced coriander

Steps

  1. Place chopped garlic and half of the green onion in a bowl.Heat oil until hot. Pour the hot oil over the garlic. Jelly noodles|chinasichuanfood.com

  3. Bring a large pot of water to a boiling in a deep pot and then blanch your raw ingredients one by one. Then cool down and drain completely.
  4. Mix all the ingredients in a small bowl and then mix with the ingredients. Set aside for 5-10 minutes and enjoy!

Szechuan Style Salad

 

Sauce for Szechuan style salad

Ingredients

  • ½ tsp. sugar
  • ¼ tsp salt
  • ¼ tsp. Sichuan peppercorn powder or oil (optional)
  • 2 tbsp. light soy sauce
  • 2 garlic cloves, minced
  • 1 tbsp. vegetable oil
  • 1 tbsp. minced green onion
  • 1 tbsp. minced coriander

Instructions
